Love this product just as I do the brother to this one which is EcoCure#1. Just did an EQ cure on a fresh coppa muscle to make a fennel Capocollo and the color of the cured piece was amazing.

Received them in the mail very quickly after ordering. Have already used the casings on venison Landjaeger, Italian sausage, venison dry cure hard salami, and others and am always impressed with their freshness and quality.

Quality casing for dry cured Coppa and Lomo. Stufing with large diameter Coppa is challenging. Through trial and error this technique was effective. 1) hold the closed end with your hand. 2) While holding the closed end, turn the casing inside-out by pulling over your hand/wrist (it will look like a sock pulled over your hand/wrist.) 3) Grab the coppa (as iff you were wearing a mitten). 4) pullthe casing over the meat -Like talking the sock off your hand/wrist then on to the meat.

Casings were high quality and packaged well. I found them easy to use, easy to fill and held up to normal handling.

So far it smells great. It came packaged well too. I wont be able to taste the Soppressata for another month or so. But from what I'm seeing, and smelling it should taste great.

This product is packed very nicely and is easy to open and has a **** lid to make it easy to store for future use. The casings are very good quality and salted for good preservation. It has no holes and off good strength and doesn't break easily. I found the casings easy to flush with water and stuffing went very well. Like any other small sheep casing they do tangle and is a bit of a proses to untangle but I found by using baking soda helps making it not tangle that easy and makes it more slippery. Overall the casings are good value for money and good quality.
