Designed, engineered, and assembled in Boone, North Carolina, the Charcutier 160 by SteakAger is the mid-height workhorse of the Charcutier line. Built with heavy-duty US stainless steel and a fully modular interior, it is purpose-built for the serious charcutier who demands precision at every stage — from fermentation through long-term drying. Whether you are producing salami, bresaola, coppa, whole muscle cuts, or experimenting with biltong and dry-aged beef, the Charcutier 160 handles the full production cycle in a single cabinet.

With two independent stainless steel hanging racks, up to 120 hanger points, and full climate control across a 34°F to 100°F operating range, the Charcutier 160 is the only appliance of its kind assembled domestically with this level of capability. SteakAger technology is modularly designed for easy cleaning, repairing, and upgrading — built to last, and built to be repaired.

Ferment and Cure in a Single Cabinet
The Charcutier 160 is the only home curing cabinet that takes your product from raw to finished without moving it. Active fermentation heating brings the cabinet to 80°F for lactic acid fermentation, then transitions seamlessly to precision curing temperatures of 55°F and as low as 34°F. No secondary fermentation chamber needed. No compromises on process.

Full Climate Control — Heat, Cool, Humidify, Dehumidify
Unlike passive or single-function units, the Charcutier 160 actively manages every environmental variable simultaneously. A dedicated compressor cooling system, resistance heating element, ultrasonic atomization humidifier, and active dehumidification work together to maintain average conditions across the full 50–90% RH humidity range and 34–100°F temperature range — designed for installation in conditioned living spaces.

Fresh Air Exchange for CO₂ Balance and Ammonia Control
Programmable fresh air exchange (FAE) is built into the Charcutier 160 — a feature absent from virtually every competing unit. As your product ferments and ages, CO₂ and ammonia accumulate inside the cabinet. Programmable FAE cycles flush the chamber on your schedule, maintaining the gas balance that healthy mold cultures and proper curing require. Duration, frequency, and timing are all user-controlled through our web app.

App-Controlled
Monitor and Control your Charcutier 160 from anywhere with the Charcutier web app — accessible from any browser on iOS, Android, or desktop. Set target temperature, humidity, FAE cycles, and UVC schedules remotely. Real-time readings, program status, and alerts are always visible.

UVC Germicidal Protection
A cold cathode UVC germicidal lamp runs on a programmable schedule to maintain clean air inside the cabinet and suppress unwanted mold and bacterial growth between production cycles. UVC on/off timing is fully programmable through the app.

Two Independent Hanging Racks — Up to 120 Hanger Points
The Charcutier 160 runs two independent stainless steel hanging racks on a 50-inch vertical envelope. Each rack accepts standard curing hooks and trussed product, giving you the flexibility to run multiple batches at different stages simultaneously — fermentation on one rack while long-cure salami finishes on another. The hanging envelope is 14 inches deep by 18 inches wide per rack, designed for full-diameter salami, coppa, and whole muscle cuts.

Warranty:
The SteakAger Charcutier 160 is covered by a 12-month conditional warranty on parts and labor against defects in materials and workmanship. SteakAger will repair or replace defective components at no cost within the warranty period. This warranty does not cover misuse, improper maintenance, or normal wear and tear.
