Summer sausage casings from 61mm to 76mm — fibrous, collagen, and our printed deer head casings for wild game. These are the large-diameter casings that give summer sausage its thick, sliceable chub.

Summer sausage is cured, stuffed into a wide casing, then cooked or smoked low and slow for hours. That calls for a casing that holds its shape under long heat and lets the sausage shrink without wrinkling or bursting. Fibrous is the traditional answer — strong, dimensionally stable, and peeled off before slicing.

Which size do I need?

Fibrous, collagen or natural?

Fibrous casings are non-edible and get peeled before slicing. They're the strongest option, hold a perfectly round shape, and take smoke color well — which is why most commercial summer sausage uses them. Collagen middles in 60–68mm are edible and need no soaking, making them the easier choice for a first batch. Natural beef casings give the most traditional look and a tender bite, with more handling required.

Deer print casings for wild game. Our printed casings carry a deer head and three blank lines you can write on — the cut, the date, whose deer it was. If you're processing for friends or splitting a batch, they solve the labeling problem and look the part on the table. Available in clear and mahogany, 65mm and 76mm.

What else you'll need. Summer sausage is a cured product, so along with casings you'll want a summer sausage seasoning, Insta Cure #1, and encapsulated citric acid if you want the tangy finish without fermenting. High temp cheese stirs straight into the mix and survives the smoker. All of it is below.

Love these casings

Love these casings. Don't have to worry about them splitting open like natural hog casings. Any casings left over can be stored and used later. I have used them over a year later with no issues. Like that they are pre-tied, one less thing for me to do.
