Description
Our Zesty Italian Sausage Seasoning is a twist on the traditional Italian blend — fennel and pepper still at the core, but with garlic powder and paprika pushed forward for a brighter, sharper finish. It's built for the grill, and it holds up to char in a way the sweet and mild blends don't.
Perfect for a backyard cookout, and best enjoyed with a pale ale. It's also our most concentrated Italian blend: 3 oz. seasons 10 lbs. of meat where the others need 4.5 oz., so a 1 lb. packet still covers roughly 50 lbs.

10 lb. Recipe
- 10 lbs. deboned pork shoulder, or 7 lbs. venison with 3 lbs. fatty pork trimmings
- 1 pint ice water
- 3 oz. Zesty Italian Seasoning
Instructions
- Grind all meat through a 3/8" plate. Grind venison through a 1/4" or 3/8" plate.
- Combine the seasoning with the ice water, then mix thoroughly into the meat until evenly distributed.
- Stuff into casings, or form into patties.
Recommended Casings
- Natural hog casings, 32-35mm — the traditional choice for Italian links
- Pre-tubed natural hog casings — same casing, pre-strung for faster stuffing
- 32mm fresh collagen casings — easier to handle, no soaking
Ingredients
Salt, fennel, paprika, pepper, dextrose, garlic powder, spice extractives, and less than 2% soybean oil and silicon dioxide added as a flow conditioner.

Soybean oil used as a flow conditioner.
Storage
Store in a cool, dry place.
