Polish Smoked Stick (aka “Kabanos”). Traditionally, Kabanos is a pork sausage, but works wells with: pork, beef, wild hogs, bear, venison, duck or goose, etc. Kosher versions use chicken or turkey. If using venison, cut with pork fat.
Dried Sausage Sticks Seasoning Ingredients: salt, black pepper, white pepper, garlic, celery, onion powder, caraway, coriander, dextrose, corn syrup, milk and other spices. The seasoning has a pleasant pepper/tangy taste. Fermento can be added for a more tangy flavor.
