Works just as well as Prague Powder #2 but does not have the nitrites that have been causing health concerns. The Sausage Maker is a Ral find for new, esoteric, and effective ingredients as well as materials.
Always have good luck with this, I’m using it on beef round steak, and ground pork loin, its out of this world, makes something inexpensive taste excellent
The mild and zesty mixes are very good. I used a 60/40 pork venison mix. The next batches I will add some dried crushed red peppers. That is a personal preference though.
Haven’t made sausages for a few years but the ones I just made werereally good. Casing were perfect. The sausage maker casings a just as good as they ever were.

I use this cheese in making my own type of sausage. Bleu cheese gives my sausage a flavor that can be matched by the other cheese's that I tried.
I use this nearly for all sausages. If the recipe calls for Non-fat dry milk powder I swap with potato starch. The taste of the Non-fat dry milk powder gives, for me, a strange aftertaste.
Awesome got the kit quick took a full pork belly divided by three for all three flavors and a few more days get to smoke it up and see how it goes👍👍
Good quality smoker , holds temp very precisely even in cold weather. Try already polish sausage 15 lbs fits comfortably This smoker produces very good smoke so 1 1/2 hour at 150f is enough then 180f to finish 155f inside l recommend to put extra small pan with water on floor smoker when finishing sausages to prevent tough casing
Used the Corned Beef kit for the first time this March (St. Paddy's day), and the corned beef was awesome. The salt content was spot on with just a rinse after 7 days, and the spices tasted great. Even the cinnamon comes through. I did not add anything to the brazing liquid other than stock, a few carrots, and an onion. Sides were cooked separately. Will be doing again(still have plenty of kit left) and maybe a pastromi to go along with it. Now that I have made my own, I will never buy a store bought corned beef again.
I liked the packaging and length of the casings but I did experience several blowouts which I haven’t with Walton casings.
I bought it because it was recommended by a YouTube channel that I follow, two guys and a cooler. I have not used it yet but I am extremely happy that I've got it. I put my name on the list to be notified when it came back in stock. Soon as I got the email I ordered it. So I won't be using it anytime in the near future, but I sure look forward to using it. And I bought the kit so it came with all kinds of hog casings and seasoning. I do make my own seasonings but I'm going to try what you sent. So thank you very much.
I love this. I use this for any short term project like ba on or smoked sausage. I think it is both healthier than using instancure and works just as well.
