Caldwell's starter culture works great on cabbage - I have tested it personally. The sour fermented cabbage was crispy with great fresh flavor from November until April, when we have finished the last bucket. Note that you should keep finished product in a cool place after the initial fermentation process. Just follow the accompanying instructions if you have no prior experience - they work. And this culture is also a bit cheaper at The Sausage Maker than from other distributors. Lesser price means faster turnout, which means the goodies are fresher.

I've used for years and tried other cultures and the old salt method. This is by far the best veggie culture available. I've done every veggie imaginable and sauerkraut. Sauerkraut will be the best ever! Highly recommend.
