Fibrous Sausage Casings for Smoked & Cured Meats

Fibrous sausage casings are the standard for summer sausage, bologna, salami, and pepperoni — anything cured or smoked that needs strength, shape retention, and a clean peel after cooking. Made from plant-based cellulose, these non-edible casings are durable, smoke-permeable, and simple to work with.

Their real advantage is tensile strength. Fibrous holds up to tight stuffing in a way natural casings won't, which is what gives a summer sausage chub its dense, even texture with no air pockets. That same strength is why deer bologna and venison summer sausage are almost always run in fibrous — lean game meat needs the pressure to bind properly.

Available in a wide range of diameters, our fibrous casings come in clear or mahogany. Mahogany gives a uniform smoked color across the whole chub, so every slice looks the same; clear lets the natural color of the sausage show through. Select styles are pre-tied, protein-lined for better meat adhesion, or printed for a classic deli look.

Fibrous casings are not edible — peel them away before slicing. If you want an edible casing for smaller-diameter sausage, use collagen or natural casings instead.

Pair with summer sausage seasoning, high temp cheese, and netting or twine for hanging in the smokehouse.
