Dry Aging Collagen Sheets are a thin but durable collagen sheet. Dry Aging Collagen Sheets are used to wrap whole-muscle cuts for smoking, netting, aging or dry curing.
The collagen sheet adheres to meat and allows for breath-ability while drying and smoke penetration for adding smokey flavor. The sheets contain tiny perforations for permeability.
The sheetd are traditionally used for making prosciutto, capocollo, pancetta, and dry cured ham.

I love these sheets for making capicola. I use several products from Sausage Maker and my capicola turns out beautiful. Ecocure #2, collagen sheets, netting to hang it, and Mold 600.
Actually, I also use the hamburger patty sheets from here as well. After I slice the capicola I portion it out,and use the papers like a taco shell to neatly put them in a vac pak bag and freeze.
Honestly, AWESOME! Just used them on 2 cured pork tenderloins that went into the chamber today!! Along w/the netting I bought, they look awesome and can't wait for the both to dry!
Great product just a little bit expensive
I've used them for several years now. They simplify the process of making the best Capicola there is!
Ive been using these for years, making capocollo, lonzino and now have a new version of prosciutto in the hanging fridge. I absolutely love these sheets, the are just tough enough to not rip while putting the meat in a net. The work perfectly and never had a mishap with them, I recommend to anyone interested in trying this method.
